Healthy BBQ Chicken Flatbread

Easy dinners are a necessity here at the Prince House. I always have the best intention on starting dinner early but lets be real, the day usually gets away from me and the next thing I know it's dinner time and I haven't even started cooking. Which is why this Chicken BBQ Flatbread has become a regular on our dinner schedule. It's super quick, delicious and it's fairly healthy. Plus the kids love it! If you're like me and try really hard to have your act together but often feel like a hot mess and dinner falls by the waste side this will be a great meal for you to add to your rotation too! Dinner is saved in less then 30 mins and you don't have to grab take out again


Flatbread ( I like the Flatout Foldit brand but can use any flatbread)

Shredded Chicken 

BBQ Sauce ( I like the Rib Rack Sugar Free)

Fat Free Mozzarella Cheese

I didn't list any exact amounts of ingredients because you can make as many or as little as you want. For our family of 4 I generally cook 3-4 chicken breast and each person gets 2 flatbreads. 


Cook and Shred your chicken. I prefer to cook my chicken in the Instant Pot because it's fast! To cook your chicken in the Instant Pot cook on manual for 13 minutes with 1 cup of chicken broth. Once the chicken use the quick releas and drain the broth off. Return the chicken to the pot and use a hand held mixer to quickly shred your chicken. Once the chicken is shredded add  as much or as little chicken to your flatbread as you desire. Drizzle BBQ Sauce and top with cheese. broil in oven until the cheese us melted. Serve with your favorite vegetable.
